Cava is made by the traditional method (of secondary fermentation in bottle) use to make champagne yet is often available at a fraction of the price. I recently enjoyed a beautiful bottle of Cava that resounded this sentiment with Raventós I Blanc Rosé “de Nit” 2008.
Raventós I Blanc Rosé “de Nit” 2008 is a medium bodied sparkler with great character and rich flavor. I got nice aromas of earth, lime, and almonds.
The texture was sharp and crisp. I experienced flavors of pears and toast – a well balanced profile of fruit with a perfect touch of dryness.
I enjoyed Raventós I Blanc Rosé “de Nit” 2008 with salmon but this Cava will pair perfectly with fried foods, almonds, salads, tapas, and sushi.
If you are looking to make an entry to Rosé and prefer your bubbly about dry to off dry, then you should add this bottle to your shopping list.
