The Macallan Ends Its Harmony Collection With Two Coconut-Inspired Whiskies
The Macallan is closing one of its most experimental whisky series with an unexpected tropical note. The Scottish whisky maker has unveiled the sixth and final release in its Harmony Collection with two new single malts: The Macallan Harmony Collection Inspired by Fresh Coconut and Inspired by Toasted Coconut. The pair follows previous Harmony releases inspired by chocolate, coffee, the Scottish landscape, oak and tea.
Coconut might sound like a radical departure for a brand so closely associated with traditional Scotch whisky. The interesting part, however, is that The Macallan did not add coconut to either expression. Instead, its Whisky Mastery Team selected specific oak casks capable of naturally bringing those flavors and aromas forward during maturation.
There Is No Coconut Added To The Whisky
Despite the names, Inspired by Fresh Coconut and Inspired by Toasted Coconut are not coconut-flavored whiskies. The tropical character comes from the wood. According to The Macallan, selected American oak casks contain elevated levels of naturally occurring oak lactones capable of producing coconut-like aromas and flavors. For Fresh Coconut, sherry-seasoned American oak plays a particularly important role, with bourbon casks used to further refine the profile.
That distinction makes the final Harmony Collection considerably more interesting than a novelty flavored Scotch. Rather than introducing an exotic ingredient into its whisky, The Macallan went looking for an exotic characteristic already hiding within the traditional maturation process.
Macallan Inspired By Fresh Coconut Takes The Brighter Approach
The Macallan Harmony Collection Inspired by Fresh Coconut is bottled at 46.3% ABV and is designed as the brighter of the two new expressions. The official flavor profile combines fresh coconut with citrus and tropical fruit before moving toward vanilla, sweet oak and spice. Coconut milk and lime become more prominent on the palate, while the finish is positioned as brighter and more floral. The whisky’s natural color has even been given the appropriately tropical name “King Coconut.”
More importantly, the bottle demonstrates how dramatically cask selection can influence whisky without changing the fundamental ingredients used to make it. The Macallan currently lists Inspired by Fresh Coconut as “Coming soon.” No official retail price is displayed on its product page at the time of publication.
Macallan Inspired By Toasted Coconut Goes Richer
Inspired by Toasted Coconut takes the same basic idea in a darker and more indulgent direction. Instead of the brighter citrus character surrounding Fresh Coconut, The Macallan describes Toasted Coconut with notes including crème caramel, white chocolate and vanilla before moving into coconut truffle, lime marmalade and frangipane.
The cask recipe also changes. The coconut character is primarily drawn from American oak, including a significant use of virgin oak, with bourbon American oak helping shape the finished whisky. The result should provide an interesting contrast between the two bottles: Fresh Coconut emphasizing a lighter tropical profile while Toasted Coconut moves toward richer dessert flavors.
There is also one major availability difference. Inspired by Toasted Coconut is a travel-retail exclusive, meaning whisky collectors will need to look beyond conventional retail channels for the second half of the final Harmony release.
Even The Packaging Uses Coconut
Coconut does not merely inspire what is inside the bottle. As it has throughout the Harmony Collection, The Macallan has also incorporated material associated with the release’s theme into its packaging.
The presentation boxes for the new whiskies use paper containing discarded coconut fibers. Waste coconut coir and shells are charred using an emission-free combustion process to create charcoal, which then provides the paper with its natural dark appearance.
It is a clever continuation of the broader Harmony philosophy, which has used the annual series to explore ways natural by-products and materials that have reached the end of their traditional use can be given another purpose.
The Final Harmony Collection Returns To The Macallan Estate
The sixth chapter also brings The Macallan Harmony Collection back to the brand’s estate in Scotland through its TimeSpirit Dining Experience, created in collaboration with El Celler de Can Roca. Pastry chef Jordi Roca developed six accompanying sweet creations and serves built around the coconut theme, incorporating combinations such as coconut and whisky truffle, mango and lime, and coconut dulce de leche.
It provides an appropriately elaborate sendoff for a collection that has consistently attempted to connect whisky with food, design, nature and broader creative disciplines.
When Will The Macallan Fresh Coconut Be Released?
The Macallan officially announced the final Harmony Collection on August 4, 2026. Inspired by Fresh Coconut remains listed as coming soon, while Inspired by Toasted Coconut is designated for travel retail.
The Harmony Collection has always been at its strongest when its annual themes reveal something unexpected about whisky itself rather than simply providing inspiration for new packaging. Coconut gives the series an especially fitting finale. The flavor sounds unconventional, but the technique responsible for it remains rooted in one of Scotch whisky’s oldest fundamentals: selecting the right oak and giving the spirit enough time for the cask to reveal what was already there.
